Low-Fat Cranberry-Raisin Carrot Salad

• 4 cups grated organic Carrots
• Ύ cup dried Cranberries
• Ύ cup Raisins
• Juice of 1-2 Oranges

Directions: Mix shredded carrot, dried cranberries and raisins in a bowl. Drizzle the juice of the orange onto all ingredients, mix and serve. Stores in refrigerator up to one week.

This salad recipe is healthy and great for providing extra Vitamin A, which is necessary for a healthy immune system and great vision. It especially tastes good after the second day because the dried raisins and cranberries have soaked up the juice of the orange. It's sweet enough that even children go back for a second helping.

Notes:

• Oranges and other Citrus fruits are used for obesity, hemorrhoids, varicose veins, bruising, heart disease, stroke and they raise the body temperature up just a little which in turn fights off viruses/bacteria.
• Cranberries are used for urinary tract infections, as an antiviral, they make the inside of the bladder slicker so that bacteria can't stick to it and they tighten the urinary sphincter muscles so can help with urinary incontinent problems.
• Raisins and Grapes are used to benefit the colon, anemia, the kidneys and heart, they are high in iron, soothing to nervous system, build hemoglobin, promote healthy bowel action, cleanse the liver, help to eliminate uric acid, help with low blood pressure, and are good for obesity (if you don't eat too many of them.)
• Carrots are great for the eyes, liver problems, high cholesterol; they protect the skin from UV rays, nourish the nervous system and are helpful for problems like Multiple Sclerosis, arthritis, osteoporosis, and low blood pressure.
