Restaurants rely on good food and quality customer service to retain loyal customers and succeed in a competitive industry.

Food and beverage serving and related workers who exhibit excellent personal qualities-such as a neat clean appearance, a well-spoken manner, an ability to work as a member of team, and a pleasant way with patrons-will be highly sought after.

In many fine-dining restaurants where more complicated meals are prepared and often served over several courses waiters provide a more formal service. This takes some skill and is known as ‘full silver service', emphasizing personal, attentive treatment at an elegant and leisurely pace. This is when an exceptional waiter needs a good memory to avoid confusing customers' orders and to recall faces, names, and preferences of food requirements of frequent patrons.

Presentation is important in this type of establishment and it's important that waiters present themselves neatly and professionally. Employers also look favourably on punctuality, not just knowledge of different dishes, ingredients, cooking terms, and cooking styles and in fine dining, it is important to have some knowledge of wines. After all, what good is waiting at tables if the customer is there ahead of you?

In large dining rooms and cafeterias, attendants assist waiters by cleaning tables, removing dirty dishes, and keeping serving areas stocked with supplies. Sometimes they bring meals out of the kitchen and assist servers by distributing dishes to diners. They also replenish supply of clean linens, dishes, silverware, and glasses in the dining room. Bartender helpers keep the bar area clean, wash glasses, and assist the bartender as required.


If the restaurant or café has a counter service, then attendants usually handle all the needs of customers seated at the counter. They may also prepare items such as milkshakes, ice cream sundaes, sandwiches and serve ready prepared items such as salads.


Servers may meet with managers or chefs before each shift to discuss the menu and any new items or specials, review ingredients for potential food allergies and any food safety concerns. Additional topics may include coordination between the kitchen and dining room, or any customer service issues from the previous day or shift.

It is the job of the waiter to liaise between kitchen and service areas to ensure prompt pickup of food items. In addition, identify any additional items required, from the kitchen, to the diners, through checking service areas and consulting with kitchen staff. Customer service and satisfaction is of the utmost importance, because without the customer you would have no job.

Also, as a waiter, you should check crockery and glassware for chips, marks, spills and drips as sometimes these may be overlooked in a busy kitchen. Advise colleagues promptly should you find anything that needs immediate attention. You must carry plates and/or trays safely and according to the restaurants procedures.
