Mouth-watering Morocco

Sugar and spice and so much nice comprise the sumptuous stews and delicate desserts of a Moroccan meal. Lift the conical top off a terracotta tagine and drown your olfactory organs in the aromas of tender lamb, beef or chicken, tomatoes, cinnamon, cumin, ginger and the infamous preserved lemon.

The heat-retaining base of the tagine sizzles the stew's juice and warms its contents long after removal from the stove. Mouth-watering and multihued, your hands and a soft loaf of bread serve to soak up the flavors of this delicious dish.

Common combinations include lamb with prunes or figs, chicken with lemon and olives or beef with egg and tomatoes. Any medley makes a magnificent meal, and the prefect prelude to a Moroccan dessert. Ripe, seasonal fruit, whole or cut, melts in your mouth and dissipates the lingering spice.

Icy watermelon, plump dates or sweet clementines cool a post-tagine palate and cleanse tingling taste buds. These strictly seasonal sweets justify eating fruit as dessert, their sugars as bold and satisfying as chocolate.
