Marquees are no longer simply decorated tents erected in the back garden. Wedding marquee hire is on the increase with more and more prospective brides and grooms wanting a bespoke ambience which is so easily created in a marquee. A blank canvas as it were, for the couple, the catering company and the wedding planner to create a unique masterpiece. Wedding marquees are now stylishly designed both inside and out. This is an excellent solution if the chosen venue does not have the capacity to accommodate numbers inside. Erecting a marquee in the grounds solves that issue.

This trend in the Asian wedding market brings on a demand for Asian catering companies that can work in mobile kitchens under stressful time restrictions in unpredictable weather conditions. Finding the right catering company is imperative to the success of the day. The marquee hire company may well offer catering services as part of a package, it is a good idea to enquire whether this is a sub-contracted service. Reputable Asian catering companies can offer marquee hire under their umbrella of services which immediately eases the pressure of finding a good marquee supplier for the couple. This means of course that the caterer is then responsible for ensuring the marquee and its facilities are all up to standard.

Preparing hundreds of meals for guests, perfectly timed to reach guest tables simultaneously is a challenging task. For Indian catering, some requirements are slightly different to those of an English caterer but the basics remain the same. A catering tent is an absolute essential for any caterer, a specific covered space which can be converted into an organised mobile kitchen. The catering or preparation area must be organised for the production of the various courses of the meal. A separate clearing area for the cutlery, crockery and glassware must also be available. Both these areas have to be linked to the main structure.

The power requirements are an important consideration. Indian catering companies will usually provide their own gas and gas burners for preparing of curries, frying of Samosas etc and firing traditional tandoors (clay ovens) . However ovens will also be needed as will refrigeration and lighting so a mobile generator is almost certainly required. Ample running water supply will need to be available, in the case of Asian catering the cooking of fresh rice will require water as well as the usual teas, coffees and general cleaning up. Good Indian catering companies will transport food in cold storage vehicles which will need to be powered when standstill, these can be used to chill beverages also. The provision of power and running water and protection from the weather are essential for catering companies working in marquees.

The provision of cutlery, crockery, glassware and linen will usually be the caterers' responsibility while the actual tables and chairs will be supplied by the marquee hire company. On site meetings are important to ensure all suppliers know their specific responsibilities and guarantee success on the day.
