Malt-O-Meal Apple Meringue Pie

I like to include nutritious ingredients in my desserts so I use cooked cereal quite a bit. Cereal tends to add a delicious flavor as well nutrition not found in a lot of desserts. I made this pie for dessert today and there is not one crumb left for a snack. Nobody even got a second piece. So I know it was good. My mother made this a lot when I was a child just as my grandmother made it for my mother when she was a child. I like to hang on to good things.

To make this pie I put into a double boiler 2/3-cup water, a pinch of salt, and 1-cup of whole milk or light cream. When that comes to a boil I add 4-tablespoons of old fashioned malt-o-meal cereal. Add the cereal slowly so it will not lump up. I let the mixture cook for 15-minutes. I peel and slice enough apples to make 2-cups. I cook them until they are fork tender.

In the meantime I separate 2-eggs. I beat the egg yolks well. When the cereal has cooked 15-minutes I temper the egg yolks and add them to the cereal along with 2-tablespoons of sugar and 1/4-teaspoon vanilla. I pour the cooked apples into a pre-baked crumb crust and sprinkle them with a little cinnamon. Next I pour the cereal over the apples. I beat the egg whites with 2-tablespoons of sugar and pile it on top of the pie.

I brown the meringue with a culinary torch or it can be put under the broiler just to brown it a bit. The pie should be chilled before it is served.
