A Secret Curry The Indians Didn't Want The Outside World To Know About

Welcome to the Gourmet Indian Recipe Series. Today we bring you every the secret curry that Indians never wanted the outside world to know. It is a Goat Curry.

Goat Health Facts: Goat meat is 50-65 percent lower in fat than similarly prepared beef, but has a similar protein content. The US department of Agriculture also has reported that saturated fat in cooked goat meat is 40 percent less than that of chicken, even with the skin removed. All this adds up to more goat in your diet!!

Ingredients: 1 leg of young goat (leg of mutton if goat unavailable), seasond flour, 2 tbsp. ghee, 2 onions chopped, 3 cloves garlic chopped, 2 tbsp. curry powder (bolsts hot is good), 1 1/2 cups chicken stock, 400gm tin tomatoes drained, 1tbsp. brown sugar, 3 tbsp. malt vinegar, 3 tbsp. tomato paste, 6 tbsp. soy sauce

Method:
1. Bone out the leg and cut into 1" cubes.
2. Coat meat with seasond flour.
3. Heat ghee in a heavy based pan.
4. Add goat and cook until brown remove from heat and allow to drain on kitchen paper.
5. Place meat in a large casserole dish.
6. Pour off all but 2 tbsp. of fat from pan add and fry onions, garlic and curry powder until onion is slightly soft, do not brown as the garlic will have a bitter taste.
7. Add all other ingredients and bring to the boil ,lower heat and cook until liquid has reduced slightly.
8. Pour mixture over the goat and cook in moderate oven for approx 1 hr or until the meat is tender.
9. Stir meat a few times during cooking.
